I am going to try sort of the same thing tomorrow. The curry I used to make, which is NOT traditional, but really homemade, contained a lot of veg as well. Also I use coconut milk instead of tomatoes to make it saucier. I personally like to add some lime juice and some palm sugar as well, to give it a bit of a twist. But really nice recipe. I’ll definitely use some of the stuff you showed.
